About the Role

We are seeking a talented and commanding Sous Chef to join our culinary leadership team. At Cafe Del Mar, the kitchen is the engine of our experience. You will be the right hand to our Executive Chef, helping to manage a large brigade in a high-volume, fast-paced environment without compromising on quality.

From our signature Mediterranean seafood to our intricate Asian-fusion plates, you will oversee the pass, ensure consistency in every dish, and drive the team to perfection during our busiest sunset services.

Key Responsibilities

  • Operational Leadership: Run the kitchen operations in the absence of the Head Chef, managing the line and ensuring smooth service flow.
  • Quality Control: Enforce high standards of plating, taste, and freshness across both the Restaurant and Poolside menus.
  • Team Management: Train, mentor, and motivate junior chefs and station leaders (CDPs).
  • Inventory & Costing: Assist with ordering, stock control, and minimizing food waste to meet cost targets.
  • Standards: Maintain strict adherence to HACCP, hygiene, and safety regulations.

Requirements

  • Minimum 3+ years experience in a similar role within a high-volume, upscale venue.
  • Strong knowledge of Mediterranean cuisine; experience with Asian fusion is a plus.
  • Excellent leadership and communication skills (English is mandatory).
  • Ability to remain calm and focused under high pressure.
  • Currently based in Malta or holding a valid EU work permit.
